WHere is an easy take on a beverage from our latest menu. It's a party-sized pre-mixed that's packed with flavours of the Christmas time, which makes it ideal for hosting a holiday party. Reserve the remaining citrus syrup for brunch beverages, sweets, or to mix additional servings of bikinis.

Makes enough for 10 people
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml recently pressed lemon juice
500g fine sugar
For the Cocktail (makes 850ml, serving 10)
400ml premium vodka
100ml dry gin
150ml peach liqueur
200ml clementine syrup (see above)
Fresh cranberries, for garnish
Mandarin essential oil, as a final touch
Method
Making the Syrup: Put the listed components inside a saucepan, heat until it reaches a gentle boil, agitating to dissolve. Then, take off the stove allowing it to cool down entirely. Pour into a clean bottle, close it and refrigerate it in the refrigerator, where it will keep for up to a month.
To make Premix: Pour the specified liquid ingredients into a large bottle, leave to sit for an hour, then filter it , ideally through muslin, to ensure it's completely strained.
For serving: Pour 85ml of your premix into a stirring glass containing ice, and stir gently for one minute to chill. Filter into a chilled martini glass or a similar vessel, garnish with a few cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
